Administration Joomla! 5.x • New user account activation

Joomla 5.1.2

If I change the subject activation from "self" to "Administrator" the site admin gets the email.
My questions are;
1. can I change the email address for registrations to something else?
2. Will User fields that are added to the registration form be included in the email?
